This whisky is produced from spelt grain, an ancestor of modern-day wheat. The master distiller grows the spelt himself and extracts the distillate straight from the mash over a wood fire. After storage in French Limousin barriques, this whisky offers light, summery aromas of apricot and plum in the nose, followed by subtle smoky tones. Initially peppery on the palate, then with notes of caramel, wood and honey.
